Baked Chicken

Tonight, I’m making baked chicken… pretty simple stuff, but it’s going to be delicious. I’ve discovered the trick for making baked chicken thighs come out insanely juicy and tender, and I’m going to show you how I did it. Anyway, here’s the recipe:

  • 4-8 chicken thighs, bone-in, skin-on (depends on how many you’re feeding)
  • 2 Tbs. melted butter or bacon grease
  • 3 Tbs. of whatever seasoning you like (I’m using Old Bay today)

So here’s what you do. Preheat your oven to 350 degrees Fahrenheit. Spray a baking sheet with some cooking spray, or rub some un-melted butter/bacon grease/whatever over it to grease it up. Then lay your chicken breasts on the pan, and make sure they aren’t touching.

Brush the butter/bacon grease onto your chicken, making sure to cover all exposed bits. And as a side note, I only realized I had leg quarters as I pulled the package out of the fridge… I need to start reading things more closely. Oh well, they work just as well. Chicken is chicken.

Then you sprinkle your seasoning on, covering as much as you can.

Stick the whole thing in the oven and bake for 45-55 minutes until the tops are golden brown and crispy.

Serve immediately with a vegetable or starch of your choice, if you so desire. Bon appétit!
