Anti-Vampire Chicken

Today I was really craving these amazing garlic knots that I made a few years ago, so I went ahead and decided to make it a garlic-themed night. I made what I like to call “Anti-Vampire Chicken” due to the amazing amount of garlic in it. I’ve never actually made it before, or seen it made like this, so it’s pretty much as original as it gets.

  • 1 package chicken thighs (or quarters)
  • EVOO (Extra Virgin Olive Oil, for those of you who don’t watch Rachel Ray)
  • 14 cloves of garlic
  • garlic powder
  • salt
  • fresh-cracked black pepper
  • cumin

So here’s what you do. Lay your chicken in a 9×13″ baking pan, making sure they aren’t touching more than is absolutely necessary. Brush with olive oil, getting in all those little nooks and crannies.

Stick 10 of your garlic cloves in between the chicken, as shown.

Mince your remaining 4 cloves (or however many you really want) and sprinkle them evenly over the chicken. Sprinkle the salt, pepper, and cumin over the chicken to taste.

Bake at 350 degrees for 45 minutes to an hour, or until golden brown, bubbly, and delicious. It should look like this:

Serve immediately. Makes 4-8 servings (depending on how many thighs you used).
