Cheesy Sausage Casserole

I was in a rut for what to cook for dinner a few days ago, so I decided to make a casserole. It turned out pretty well. Here’s what you need:

  • 1 lb. of cooked chicken
  • 1/2 package of frozen broccoli
  • 8 oz. shredded sharp cheddar cheese
  • 1 can cream of chicken soup
  • 3 cups cooked rice
  • a good squirt of Sriracha
  • a smaller squirt of yellow mustard

Pretty simple, really. First, grate your cheese. Please please please please grate your own cheese. Pre-shredded cheese is coated in cornstarch to keep it from clumping together. It doesn’t taste that good. And here, I used 4 oz. sharp cheddar and 4 oz. Monterrey jack, because that’s what I had on hand.

Add your soup, chicken, and broccoli.

Hehe yeah, I used Polish sausage. It’s what I had on hand. Are we sensing a theme yet?

Mix it up a little, and add your Sriracha and mustard. You could use other spices too, if that’s your thing.

Mix it up some more, and add your rice.

I really like this bowl. Just saying.

And then you mix it all together, and add it to a casserole dish. You could put it in a 9×13″ pan, or a round casserole dish, like I did here.

Don’t worry too much if it gets on the side a little. Casserole’s aren’t meant to be clean, for heaven’s sake! Just kidding. But seriously.

And you can add some extra cheese on top, or some bread crumbs, if that’s what floats your boat.

Throw it in the oven (not literally, please) at 350 and let it sit in there for about half an hour. More if you want it to be SUPER cheesy.

The brilliant thing is that nothing is actually cooking, so it’s really just heating up and all the ingredients are getting to know each other. It’s a cheesy rice party, minus the awkwardness of normal parties. Anyway. Let it bake for a while.

Take it out, and serve hot!

Serves approximately 4 people… although you might be able to make it stretch. Enjoy!
